Flavours of Mexico at Cookbook Cafe
To celebrate the Dual Year of commerce between Mexico and the United Kingdom, Executive Chef Ricardo de la Vega will recreate a taste of the award-winning Frida restaurant in Grand Velas Riviera Maya at InterContinental London Park Lane.
Taking place from 12 to 19 September 2015, Flavours of Mexico will showcase the creativity of Mexican cuisine from one of the country’s most artistic Chefs, famed his delicate balance of traditional ingredients with modern techniques.
Hosted by the Mexican Embassy, Mexican luxury hotel group Velas Resorts, InterContinental London Park Lane and Aeromexico, Chef Ricardo and his Sous Chef Mario Alberto Lopez will present iconic dishes from Frida including ‘shredded venison, crunchy corn and garlic mashed avocado’ and ‘baked cheese with poblano chili jam’, along with more traditional examples ‘rissole roasted suckling pig’ and ‘Mexican mole Mousse’.
Born in Mexico City, Chef Ricardo De la Vega has worked for top hotels and restaurants across Mexico and has a deep understanding of the regional delicacies that make up Mexican food from states including Puebla, Oaxaca, the Yucatan and Quintana Roo.
His contemporary Mexican cuisine is created without compromising its traditional essence and Frida, which celebrates the legacy of the Mexican painter Frida Kahlo and has been awarded Four AAA Diamonds.
Select from dishes including;
- Shredded venison, crunchy corn and garlic mashed avocado
- Baked cheese with poblano chili jam
- Rissole roasted suckling pig
- Mexican mole mousse
Select A La Carte or tasting menu, which is priced at £44. A separate vegetarian menu will also be available and all guests will receive a complimentary arrival canapé.
Dinner is served each evening from 6:00pm to 10:00pm, lunch is served Monday to Friday from 12 noon to 3:00pm.

There is also a special Mexican influenced brunch on Saturday, September 19th and Sunday 20th. Reservations are highly recommended.
