BLUE CHEESE GUACAMOLE

A British twist (make sure its stilton!) on a Latin American classic

Ingredients:

2 very ripe avocados
3-4 sprigs fresh coriander
1 tsp smoked ground paprika
1/4 chilli powder
1/2 lime juice
1 Red jalapeño
pinch of maldon salt and pepper
Optional: 1 tbs Sour cream & 1 heaped tbs of crumbled stilton

Method

  • Mash the avocados with a squeeze of half the lime juice to keep it from going brown too quickly.
  • Add the salt and pepper and spices.
  • Dice the red jalapeño and add to the guacamole.
  • Roughly chop coriander and mix into the guacamole.
  • Add a sprinkle of paprika to finish it off.
  • Add a dollop of sour cream and crumble in the Stilton, make sure its all incorporated.
  • Garnish with a red jalapeño slice and your all done!


NOTE: Take the cheese out of the fridge first. Make sure its room temperature so it spreads evenly in the guacamole.
