Pulled Pork with Chipotle Sauce

Pulled Pork is a favourite with Brits and Mexicans alike and this version of slow cooked pork with a smoky spicy taste is just irresistible wherever you're from. Chipotle has a majestic taste and a distinctive smoky flavour. Chipotles are small peppers (often jalapeños), and usually have been dried by a smoking process. Yes, they are spicy, but if you use the right amount, it doesn't have to be burn-your-face-off spicy. Start with small amounts and add more to taste. The following recipe is for those gatherings with friends and loved ones who like to share succulent meat packed full of flavour.

Portions: 4

Preparation time: 20 minutes.

INGREDIENTS:

800 Grs. Pork meat (pork shoulder)

1 Liter of chicken broth

½ Cup of orange juice

5 Tablespoons of White vinegar

2 Garlic cloves chopped

½ Onion chopped

1 Tablespoon of ground cumin

½ Teaspoon of pepper

1 Teaspoon of salt

4 Tablespoons of Chipotle Sauce EL YUCATECO

2 Cups of cabbage

2 Cups of red cabbage

2 Peeled, grated carrots

1 ½ Cups of mayonnaise

1 Tablespoon of sugar

8 Buns

INSTRUCTIONS

Place in blender: orange juice, 3 tablespoons of vinegar, garlic, onion, cumin, salt, pepper and the chipotle sauce “El Yucateco”, place the pork in a saucepan with the chicken broth at high temperature, pour the sauce, cook for 2 hours, and pull it into thin strips.

Combine the white and red cabbage, carrots, mayonnaise, 2 tablespoons of vinegar with the sugar and stir well.

Heat the buns, place some meat, add a small portion of the cabbage salad and serve.
